Whoopie!!

A tip from my daughter, Alison, intrigued me to make 
Red Velvet Whoopie Pies!

The recipe:

1 boxed cake mix
3 eggs
1/2 cup water
1/2 cup oil

Bake at 375 degrees.
Line baking sheet with parchment paper.
Bake 8-10 minutes.
Cool on wire racks.



Filling:

1 cup butter, softened
2 cups marshmallow creme
1 1/2 cups powdered sugar
1 tsp. vanilla extract

Beat on high with an electric mixer
until light and fluffy.

  1. Um, whoopie pies may be one of my favorite things to make! I have a heart shaped whoopie pie pan. Don't be jealous!
